4 GOOD QUALITY CUMBERLAND SAUSAGES – REMOVED FROM THE SKIN
1 HEAPED TBSP FENNEL SEEDS
GENEROUS SPRINKLE OF WHITE PEPPER
START BY REMOVING THE SAUSAGES FROM THEIR SKINS | HEAT A GENEROUS GLUG OF OIL IN A NON-STICK FRYING PAN | ADD IN THE SAUSAGE MEAT, FENNEL SEEDS AND WHITE PEPPER | ALLOW TO COOK UNTIL YOU HAVE A CRISPY CONSISTENCY, SET TO ONE SIDE AND KEEP WARM UNTIL THE PASTA IS READY
BRING A LARGE PAN OF SALTED WATER TO THE BOIL THEN ADD THE PASTA AND COOK AS PER INSTRUCTIONS BUT ONLY UNTIL VERY AL DENTE REMOVING A COUPLE OF MINUTES PRIOR TO IT BEING DONE | ADD TWO LADLES OF THE PASTA WATER TO A LARGE FRYING PAN | ADD IN THE CHEESES AND PEPPER AND STIR OVER A MEDIUM TO LOW HEAT UNTIL YOU HAVE A THICK SAUCE THEN USE TONGS TO ADD THE PASTA AND COMBINE | IN A SEPARATE FRYING PAN ADD A GOOD GLUG OF OIL, TURN UP THE HEAT AND ADD THE PASTA. ONCE THE OIL IS HOT, ALLOW TO TURN A LITTLE CRISPY ON THE UNDERSIDE.
SERVE WITH A GENEROUS HELPING OF CRISPY SAUSAGE AND FENNEL SEEDS.
